Let me start off by explaining the ff*
We have a friend called Fizo and he’s lactose intolerant.
He will skip on every cake he sees because he knows it wont end well and we’re not talking about gaining weight. Well challenge was accepted and I found this banana bread recipe that doesn’t use butter and it has yogurt, but lo and behold, cooked yogurt didn’t pose a problem for our dear friend Fizo. And I don’t remember who exactly that came up with this term, but anything that is lactose friendly on my menu has been name as Fizo Friendly aka ff*
So here’s my very versatile FF Banana bread recipe
ff* Banana Bread
2 large eggs
85 gm / 1/3 cup yogurt
111 gm / 1/2 cup vegetable oil
300 gm / 3 large bananas mashed about 3 large bananas
200 gm / 1 cup white sugar
100 gm / 1/2 cup brown sugar
1/2 tsp vanilla
1 tsp baking soda
224 gm / 1 3/4 cup all purpose flour
Mash the bananas well, then mix in the oil, yogurt, vanilla extract and the eggs.
Add in the sugars and incorporate well.
Add flour, baking soda and salt.
Here you can add nuts, dried fruits, chocolate chip, divide batter and add in cocoa for half and half. Flax seeds, chia seeds, pepitas go nuts! Or leave it plain.
Pour into a loaf pan and bake in 350 degree oven for an hour or until a toothpick come out clean.
Wait until its cooled and cut into slices and enjoy.
I personally like to smear Nutella all over and eat it. Yum
Note: I’ve make this in 1 loaf pan, mini loaf and even doubled it and made a layered cake with it.
