German Plum Streusel Recipe


For the cake:

3 to 4 plums, destoned and sliced into              small wedges

125 gm butter

125 gm sugar

3 eggs

1 tsp vanilla

208 gm flour

a pinch of salt

For the streusel:

93 gm of flour

75.6 gm of butter

50 gm of sugar

1 tsp of cinnamon

50 gm of chopped hazelnut


Preheat oven to 375F. 

Prepare the streusel first:

Combine the flour, butter, sugar and cinnamon and mix together until crumbly in texture. Then mix in the hazelnuts. And set aside. 

For the cake batter:

Mix together flour, baking powder and salt. Set aside. 

In a stand mixer, or a bowl with a hand mixer. Beat together butter and sugar on medium for 4 mins, until butter becomes pale in colour. 

Add eggs one at a time, and mix until the egg is fully incorporated before you put in the next egg. When you've put in all the eggs, add the flour mixture, but make sure that you don't overmix. 

Distribute the batter evenly into your mini loaf pan, or you can use one large loaf pan. 

Arrange the sliced plums over the batter, and sprinkle with your prepared streusel. 

Bake in the oven for 50mins. 

Tip: you can test if the cake is baked, by putting a wooden skewer in the cake. If it comes out clean, then it's baked completely. If it comes out wet, it means the cake is still raw.
